In the winter months we are so lucky that we get an abundance of winter veg. The only problem is that people have forgotten how good they taste and also how to cook them. We aim to bring back using all the vegetables that are grown over the winter months.

Swede is a great root vegetable to eat in winter, not only is it cheap but because the flesh gets sweeter after the plants are exposed to cold temperatures. Carrots, well you can get them all year long but they are value for money.

To my carrot and swede recipe I add, butter and lots of it. Also salt and lots of pepper with a few gratings of nutmeg to increase that little spice heat.

They can be frozen and reheated in an instant, I freeze them mashed but without seasoning or butter. That way I can decide what flavours I will have when I reheat it. Sometimes cream and grated ginger to go with fish, or perhaps thyme to go with my Sunday roast.

Swede (neep) mash goes great with haggis a very traditional Scottish food. It wasn’t until I started researching cheap winter recipes I released that Americans call swede – Rutabaga. Some places know as a Swedish Turnip.

Sometimes its good to forget the calorie counting and just get something comforting inside. Something hearty that fills you up and sticks to your ribs kinda food. The type of food you just want to roll on the sofa afterwards. These are perfect budget winter recipes that bring comfort to the plate.
