The sun is shining, we are feeling energetic and a spring in the step. Its summer and our dietary needs change with the season. Our bodies need food that is a little less calorific, refreshing but still tasty. We need to look to what is in season for the summer to get value for money. Panzanella
Panzanella or panmolle is a Tuscan chopped salad of soaked stale bread, onions and tomatoes that is popular in the summer. It often includes cucumbers, sometimes basil and is dressed with olive oil and vinegar.
Lovely ripe tomatoes, capers, anchovies and onions make this a very budget friendly summer meal. It can also be used to accompany something light, like griddled sea bass. A traditional Italian recipe.
