Parsnip, Apple and Smoked Paprika Soup
Soup, warming, satisfying and it seems hug your very soul to bring new hope. One of the best accompaniments to soup I discovered was one New Year we celebrated in Scotland. The wife hails from what she calls gods country. I diverse, anyway it was warm soup and sandwiches, a traditional scottish food group. This is apparently an every day occurrence and I must concur. The warm silky smooth soup then a bite of textured bread with a cool filling. The two just go together. Yes I did dunk the bread in the Parsnip, Apple and Smoked Paprika Soup.
Shopping For Ingredients
Another last minute decision as I was walking around in the supermarket as you do ! I stumbled across several 1-kilo bags of parsnips for 38p and I had made the Carrot and Corriander soup a few days ago I thought why not give this a go as well. They are great for grabbing out of the freezer and reheating for the other half to take to work for lunch.
Not got time, you could always cheat with a soup maker.
Prepare And Save Time
It gives me another 10 minutes in bed before having to get up and do lunch before she goes to work. I did the usual and scoured for a good recipe and found a couple but nothing had the depth of flavour I wanted so I tweaked it a little to my taste and what I had to hand.
Parsnip, Apple and Smoked Paprika Soup
Some recipes specified Bramley apples, some cooking apples, well what I used was what I had in the bowl. A few granny smiths and a few reddish apples. I can not even remember what they were just that I bought them for the kids. The choice is yours. Grab the apples that are in season as they should be the cheapest. The recipe is only a guideline so don’t be afraid to use what you like.

Ingredients
- 25g/1oz butter
- 1 tbsp sunflower oil
- 2 medium onions, chopped
- 1kilo parsnips, cut into 2cm cubes
- 2 garlic cloves, crushed
- 1/2 kilo 5oz apples, (or as many as you have
- 1 LTR chicken stock
- 1tsp of Smoked Paprika
- sprigs of thyme (optional)
- salt and pepper
Instructions

Melt the butter and oil in a large saucepan. Gently fry the onions and parsnips for 15 minutes, or until the onions are softened. Add the garlic,apples and smoked paprika and cook for a further two minutes, stirring regularly.

Pour over the stock and bring to the boil. Reduce the heat to a simmer and cook for about 20 minutes, or until the parsnips are very soft. Remove from the heat and season with salt and freshly ground black pepper. Blend the mixture in a food processor until smooth.
Notes
Try a teaspoon of garam masala instead of the paprika or some crushed spices, coriander, fennel the choice is yours just get creative

Looking for an even easier way to cook soup? You could always try a dedicated soup maker or a slow cooker. Make it smoother with a good blender unless you want the chunky farmhouse soup
