Pork and prawn balls, a popular dish in various cuisines, especially in Chinese cooking, offer a delightful mix of flavours and textures. The combination of the flavours is just a burst of freshness on the palate.

To keep this pork and prawn ball recipe budget friendly I have used a greater mix of pork compared against the prawns

Ingredients
  

  • 180 g raw prawns defrosted
  • 500 g minced pork 20% fat
  • 1 lemon grass just use the inner part
  • 2 inch ginger
  • 1 clove garlic
  • 1 tbsp soya sauce
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • salt and pepper for seasoning
  • 1 tbsp sea salt
  • spring onion (scallions) optional, finely shredded

Instructions
 

  • take the ginger, garlic and lemon grass. Place into a pestle an mortar with a pinch of sea salt. Smooth out the ingredients so there is no large pieces of lemon grass. Personally I find this method better than using a blender
  • Add the defrosted prawns to a food blender along with the ground spices.
  • whiz the prawns until they are all mixed
  • scrape the prawns into a large mixing bow and then add the minced pork.
  • Start mixing the pork and prawn mixture together
  • Next add the soya sauce, sesame oil and fish oil a little at a time. There is no binder in this recipe so be careful to not add to much liquid
  • each time you add any sauces, mix then check to see if the mixture will form a ball without falling apart
  • Worse case and it become to wet and if you are avoiding wheat then add ground almonds to the mixture
  • create the pork and prawn balls with around 20 -25g of the mixture
  • Once they are made you can either cook them straight away or freeze them

Notes

To Cook these pork and prawn balls you can bake them in the oven, around 15 -20 minutes. 
You can steam them for 20 minutes 
You can gently cook them in a frying pan for around 10 to 15 minutes 
My preferred method is to poach in my chicken bone broth for around 15 minutes

  • Using 20 grams per ball: You could serve about 8-9 portions (34 balls ÷ 4 or 6 balls per portion).
  • Using 25 grams per ball: You could serve about 4.5-6.75 portions (27 balls ÷ 4 or 6 balls per portion), rounding to whole numbers, that’s approximately 5-7 portions.

Instant noodles are a great budget food and can be full of flavour. You can get the classic Demae Ramen Noodles (65p) (Most supermarkets) or you can get the Aldi instant noodles at just 35p.

    Add the water to the pan and then add the flavour packet, then add flavour packet

  2. Pork & Prawn Balls

    Add the defrosted pork & prawn balls to the pan and cook for 4 minutes

  3. Noddles

    Break up the noodles and add to the pan (you need to break them up a little otherwise the balls will not allow the noodles to cook in the broth)

  4. Vegetables

    If you want veggies with your balls and broth the easiest to add is frozen peas. You can also add small cut broccoli, add it at the same time as the pork & prawn balls. Prefer it a bit firmer then add at the same time as the noodles

  5. More Protein

    Want to get more protein in the dish and to feel fuller for longer, add in 2 boiled eggs

  6. Optional extras

    You can finish the dish with some sliced spring onions (scallions) and then also add a few drops of sesame oil to the broth
